Instructions

  1. Prepare The Ingredients: Dice the onion and avocado into small, manageable pieces and mince the garlic finely to release their flavors and ensure even cooking.
  2. Combine: In a mixing bowl, gently combine the ground turkey, raw egg, diced avocado, onion, minced garlic, lemon juice, ground coriander, sea salt, and black pepper. Use light pressing and folding motions to mix just until combined—overmixing can make the mixture mushy and hard to shape.
  3. Form Mini Patties: Using about 1/2 tablespoon of the mixture, form small balls, then flatten them uniformly in the palm of your hand or with a spatula to create evenly thick patties that cook thoroughly and consistently.
  4. Fry The Turkey Patties: Heat a skillet over medium heat and add your chosen fat (oil, ghee, butter, or animal fat). When the fat is hot enough to sizzle a drop of mixture on contact, gently place the patties into the skillet. Cook for 2-3 minutes without moving them until the undersides turn golden brown.
  5. Flip and Cook: Flip each patty carefully and cook the other side until equally golden and the patties are cooked through. Add more fat as needed during cooking to prevent sticking and maintain browning.
