  • 1 tbsp avocado oil
  • 1/4 cup honey
  • 2 tbsp soy sauce (or tamari for gluten free option)
  • 1 tbsp rice vinegar
  • 2 tbsp cold unsalted butter
  • Finely chopped parsley for garnish

Instructions

  1. Prep the Chicken: Cut the chicken thighs into 2-inch bite-sized pieces. In a large bowl, mix cornstarch, flour, salt, black pepper, and garlic powder. Toss the chicken pieces in this mixture until each piece is lightly and evenly coated.
  2. Cook the Chicken: Heat avocado oil in a large skillet over medium heat until hot. Add the coated chicken pieces in a single layer, cooking for about 8 minutes on each side. Continue until the chicken is golden brown and crispy on all sides. Remove the cooked chicken from the skillet and set aside.
  3. Add the Garlic: In the same skillet, add the sliced garlic and cook for 1 minute, stirring frequently until fragrant but not burned.
  4. Make the Honey Butter Sauce: Reduce the heat to low and add cold unsalted butter to the skillet. Stir to melt the butter and then add honey, soy sauce, and rice vinegar. Stir well to combine all ingredients into a glossy sauce. To thin the sauce if needed, add a splash of water and stir.
  5. Toss the Chicken in the Sauce: Return the cooked chicken pieces to the skillet and toss thoroughly to coat them evenly with the sticky honey butter sauce.
