Ingredients

Scale

Sushi Rice Base

  • 2 cups cooked sushi rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar
  • ½ teaspoon salt

Spicy Salmon Topping

  • 12 oz skinless salmon fillet, cooked and flaked
  • ¼ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Toppings and Garnishes

  • ½ cup shredded mozzarella cheese
  • 2 sheets roasted seaweed (nori), cut into small squares
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Prepare the Oven and Baking Dish: Preheat your oven to 400°F (200°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Mix Sushi Rice Base: In a bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Mix thoroughly and then press evenly into the bottom of the prepared baking dish to form a smooth rice layer.
  3. Prepare the Spicy Salmon Mixture: In a separate bowl, combine the flaked cooked salmon with mayonnaise, Sriracha sauce, soy sauce, and sesame oil. Mix well until the ingredients are fully incorporated.
  4. Assemble the Bake: Evenly spread the spicy salmon mixture over the sushi rice layer in the baking dish. Then sprinkle the shredded mozzarella cheese evenly on top of the salmon layer.
  5. Bake: Place the baking dish in the preheated oven and bake for 18 to 20 minutes, or until the cheese is melted, bubbly, and starting to brown slightly.
  6. Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish with thinly sliced green onions and toasted sesame seeds. Serve warm with the roasted seaweed squares for scooping the sushi bake.

Notes

  • Use fresh salmon for the best flavor, and ensure it is fully cooked before flaking for safety.
  • Adjust the amount of Sriracha according to your preferred spice level.
  • Substitute mozzarella with a milder cheese like Monterey Jack or a melting cheese of your choice if desired.
  • Can be served as a family-style dish or portioned into individual servings.
  • Store leftovers in the refrigerator and reheat in the oven or microwave for best results.
