Instructions

  1. Prepare ingredients: Rinse and pat dry the shrimp. Trim the asparagus and cut into bite-sized pieces. Clean and slice mushrooms. Mince the garlic cloves.
  2. Heat the pan: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until hot but not smoking.
  3. Cook the shrimp: Add the shrimp to the hot pan and stir-fry for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside to prevent overcooking.
  4. Stir-fry the vegetables: Add the minced garlic to the pan and sauté for about 30 seconds until fragrant. Then add the asparagus and mushrooms. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  5. Combine and season: Return the cooked shrimp to the pan with vegetables. Pour 2 tablespoons of soy sauce over the mixture and stir well to coat. Optionally, drizzle with 1 teaspoon of sesame oil for added flavor. Cook together for another minute to combine flavors.
