  • 2 tablespoons soy sauce

  • 2 tablespoons corn starch

Vegetables and Cooking

  • 2 cups scallions, chopped (white and green parts separated)
  • 4 tablespoons oil

Instructions

  1. Preparing: Combine the chicken pieces with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch in a bowl. Mix well and marinate for 10 minutes to allow the flavors to develop. At the same time, chop the scallions, keeping the white parts separate from the green parts for staggered cooking.
  2. Pan frying chicken: Heat oil in a non-stick pan over medium heat. Add the marinated chicken pieces and fry them until they are fully cooked and browned on the outside, ensuring the chicken is cooked through.
  3. Adding scallions: Add the white parts of the scallions to the pan and cook until they soften. If using larger or bone-in pieces, cover the pan with a lid to ensure thorough cooking. Once the chicken is cooked, add the green parts of the scallions and stir-fry for about 10 to 20 seconds to lightly cook them and release their fresh aroma.
  4. Serving: Transfer the scallion chicken to a serving plate, sprinkle additional black pepper or scallions if desired, and serve hot with steamed rice or noodles for a complete meal.
