Ingredients

Scale

Wet Ingredients:

  • 2 large eggs
  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder

Add-ins:

  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (in oil, drained)
  • ¼ cup chopped fresh basil
  • Optional: pinch of black pepper or red pepper flakes for a kick

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease an 8×4-inch loaf pan and line it with parchment paper to ensure easy removal of the bread after baking.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, whole milk, olive oil, and plain Greek yogurt until the mixture is smooth and evenly combined.
  3. Combine Dry Ingredients: In a separate bowl, mix the all-purpose flour, baking powder, salt, and garlic powder to evenly distribute the leavening and seasoning through the bread.
  4. Combine and Fold: Gradually add the dry ingredients to the wet ingredients and gently stir until just combined to avoid overmixing. Then fold in the shredded mozzarella, chopped sun-dried tomatoes, and fresh basil for that classic Caprese flavor.
  5. Bake: Pour the batter into your prepared loaf pan and smooth the surface with a spatula. Bake in the preheated oven for 40 to 45 minutes until the bread is golden on top and a toothpick inserted into the center comes out clean.
  6. Cool and Slice: Allow the bread to cool in the pan for about 10 minutes to set. Then transfer it to a wire rack to cool completely or slice immediately to serve warm or at room temperature.

Notes

  • Do not overmix the batter to keep the bread tender and fluffy.
  • For added flavor, drizzle a little olive oil on top before baking.
  • Substitute whole milk with a dairy-free alternative for a lactose-free option.
  • Serve warm with a spread of butter or with a side of marinara sauce for dipping.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
