  • 8 ounces burrata cheese

Instructions

  1. Preheat and roast the tomatoes: Preheat your oven to 400°F (200°C). On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning if using. Spread them evenly and roast for 20-25 minutes until blistered and caramelized. Add the minced garlic during the last 5 minutes to avoid burning and allow it to mellow and infuse flavor.
  2. Cook the pasta: While the tomatoes roast, bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta cooking water before draining.
  3. Combine pasta and roasted tomatoes: In a large bowl, mix the cooked pasta with the roasted tomatoes and their juices. Add the remaining tablespoon of olive oil and toss everything to combine thoroughly. If the pasta seems dry, gradually add the reserved pasta water until you achieve your desired saucy consistency.
