Crepe Batter

- 1 1/4 cups milk (whole or 2%)
- 2 large eggs

- Prepare the batter: In a mixing bowl, whisk together the flour, salt, and sugar. In a separate bowl, beat the eggs with milk and melted butter. Gradually pour the wet ingredients into the dry mixture, whisking continuously until the batter is smooth and free of lumps. Let the batter rest for 15–30 minutes to ensure tender crepes.
- Heat the pan: Place a non-stick skillet or crepe pan over medium heat. Lightly grease it with butter or oil, wiping away excess with a paper towel to ensure a thin coating.
- Cook the crepes: Pour approximately 1/4 cup of batter into the center of the hot pan. Immediately lift and tilt the pan in a circular motion to spread the batter evenly into a thin layer covering the surface.
