Pie Crust
- 1 1/4 cups all-purpose flour

- 4 ounces Crisco (or cold butter)

Cream Cheese Layer

Homemade Whipped Cream Topping

- 1/4 cup powdered sugar

- Prepare the Pie Crust: Preheat your oven to 425°F (218°C). In a large bowl, combine the flour and salt. Add the Crisco or cold butter, using your fingers to mix until the mixture resembles coarse meal. Make a well in the center and add the cold water. Gently mix until all the flour is moistened, being careful not to overmix or knead. Form into a flat disc, wrap in plastic, and chill for 30 minutes to 1 hour.

Line the pie plate with the dough and create a decorative edge by folding under and pinching. - Prepare the Fresh Peach Filling: In a medium bowl, toss the peeled and sliced peaches with the sugar and let sit at room temperature for 30 minutes. Drain the peaches, reserving the juices. Add lemon juice to the juice and add enough water to make 1/2 cup total liquid. Pour into a medium saucepan. Stir in cornstarch and salt and whisk until smooth. Heat over medium, whisking constantly until thickened and bubbling, then boil for 30 seconds. Remove from heat and whisk in butter and almond extract until combined. Let cool to room temperature.
