Ingredients

Scale

Chicken and Seasonings

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Sauce

  • 1 packet ranch dressing mix (about 1 ounce)
  • 1 packet brown gravy mix (about 1 ounce)
  • 1 cup chicken broth
  • 1 cup cream of mushroom soup (or cream of chicken soup)

Toppings and Garnish

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (optional)
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add to skillet. Sear chicken for 5-7 minutes on each side until golden brown. Remove chicken from skillet and set aside.
  2. Make the Sauce: In the same skillet, add ranch dressing mix, brown gravy mix, chicken broth, and cream of mushroom soup. Stir thoroughly to combine and bring the mixture to a simmer.
  3. Cook the Chicken in the Sauce: Return the seared chicken breasts to the skillet, spooning some sauce over each breast. Cover the skillet and let it simmer for 15-20 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. Add Cheese and Bacon: In the final minutes of cooking, sprinkle shredded cheddar cheese and crumbled bacon over the chicken. Cover again and cook until the cheese melts completely.
  5. Serve: Serve the Mississippi Mud Chicken hot, garnished with sliced green onions. It pairs best with rice, mashed potatoes, or crusty bread to enjoy the flavorful sauce.
