Instructions

  1. Prepare Oven and Muffin Pan: Preheat the oven to 400°F (204°C) and generously grease a standard size muffin pan to prevent sticking.
  2. Soften and Arrange Tater Tots: Microwave the tater tots for a few minutes until soft enough to smash. Place 3 tater tots in each muffin cup.
  3. Smash Tater Tots and Bake: Use the bottom of a small cup to smash the tater tots flat in each muffin cup, then bake in the oven for 10 minutes to create a crispy base.
  4. Reduce Oven Temperature: Remove the muffin pan from the oven and lower the oven temperature to 350°F (177°C).
  5. Add Meat and Vegetables: Evenly distribute your cooked and diced meat (such as precooked breakfast sausages) and diced veggies (like bell peppers) into each muffin cup on top of the tater tot base.
  6. Prepare Egg Mixture: In a bowl, scramble together the 10 eggs, 1/4 cup milk, and seasoning to taste. Pour the egg mixture evenly into each muffin cup, filling about 90% full to allow for expansion during baking.
  7. Add Cheese and Bake Omelets: Sprinkle shredded cheese over the top of each filled muffin cup and bake at 350°F for 20 minutes, or until the eggs are fully cooked through.
