Ingredients

Scale

Lavender Syrup

  • 1 tablespoon dried culinary lavender
  • 1/4 cup honey or simple syrup (use more to taste)
  • 1/2 cup water

Drink

  • 1/2 to 1 teaspoon rosewater (to taste)
  • 2 tablespoons fresh lemon juice per serving
  • 68 ounces cold sparkling water or club soda per serving
  • Ice (clear cubes recommended for presentation)
  • Optional: a splash of unsweetened cranberry or pomegranate juice, or a drop of natural purple food coloring

Garnishes

  • Lemon wheel
  • Edible dried rose petals
  • Sprig of fresh lavender or rosemary

Instructions

  1. Make the lavender syrup: In a small saucepan, combine 1/2 cup water and 1/4 cup honey or sugar. Warm over low heat, stirring until fully dissolved. Remove from heat, add 1 tablespoon dried lavender, and let steep for 10–15 minutes. Strain out the lavender and allow the syrup to cool completely.
  2. Add a whisper of rose: Stir 1/2 teaspoon rosewater into the cooled lavender syrup. Taste and gradually add up to another 1/2 teaspoon if you desire a stronger rose flavor. Be cautious, as rosewater is potent and can be overpowering.
  3. Prep your glass: Fill a chilled highball or stemless wine glass with ice cubes. For a subtle moonlit hue, add a tiny splash of unsweetened cranberry juice or a drop of natural purple food coloring at this stage.
  4. Build the drink: Pour 1 to 1.5 ounces of the lavender-rose syrup into the glass over the ice. Add 2 tablespoons of fresh lemon juice per serving to provide bright acidity and balance the sweetness.
  5. Top with bubbles: Gently pour in 6–8 ounces of cold sparkling water or club soda. Stir gently once or twice to combine the ingredients without losing the carbonation.
  6. Garnish and serve: Add a lemon wheel and a pinch of edible dried rose petals or a small sprig of fresh lavender or rosemary for an elegant finish. Taste and adjust sweetness or citrus as desired before serving.

Notes

  • Use clear ice cubes for the best visual presentation.
  • Adjust the rosewater quantity carefully, as it can quickly become overpowering.
  • The lavender syrup can be made ahead and stored in the refrigerator for up to one week.
  • For a vegan version, use simple syrup instead of honey.
  • Optional natural coloring and cranberry juice add aesthetic appeal but can be omitted if preferred.
