Ingredients

Scale

Chili Sauce

  • 1 pound ground chuck
  • 1 (14.5 ounce) can petite diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 cup water

Main Dish

  • 8 hot dogs
  • 8 low carb tortillas or wraps
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C) and spray a 9×13 inch casserole dish with nonstick cooking spray to prevent sticking.
  2. Make the chili sauce: In a medium saucepan, combine the ground chuck (already cooked), diced tomatoes, water, chili powder, cumin, garlic powder, onion powder, and oregano. Bring the mixture to a boil over medium-high heat, then reduce to medium-low and simmer for 8-10 minutes until the sauce thickens and flavors meld.
  3. Assemble the casserole: Spoon a layer of the prepared chili sauce into the bottom of the casserole dish. Roll each hot dog tightly in a low-carb tortilla and place them seam-side down in the sauce, fitting all 8 hot dogs snugly.
  4. Add chili sauce and cheese: Pour the remaining chili sauce evenly over the rolled hot dogs. Then sprinkle the shredded cheddar cheese evenly on top of the casserole.
  5. Bake the casserole: Place the dish in the preheated oven and bake for 30-35 minutes until the cheese is bubbly and golden, and the casserole is set and heated through.
  6. Serve: Remove from the oven and let the casserole cool slightly before serving. Add your favorite toppings such as sour cream, diced onions, or jalapeños if desired.

Notes

  • You can use pre-cooked or freshly cooked ground chuck for best texture.
  • If you prefer spicier chili, increase chili powder or add some cayenne pepper.
  • Low-carb tortillas help keep the dish keto-friendly, but feel free to use your favorite brand or make homemade low-carb wraps.
  • For a dairy-free option, substitute cheddar cheese with a non-dairy cheese alternative.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
