Instructions

  1. Season the Chicken: In a bowl, coat the chicken thighs evenly with garlic powder, onion powder, smoked paprika, salt, and pepper, ensuring all sides are well seasoned.
  2. Sear the Chicken: Heat a skillet over medium heat and add a little oil if needed. Sear the chicken thighs for 3 to 4 minutes on each side until they turn golden brown. Remove the chicken from the skillet and set aside temporarily.
  3. Prepare the Sauce: In a small bowl, combine the BBQ sauce, honey, soy sauce, and minced garlic. Stir well to blend all flavors.
  4. Toast the Rice: In the same skillet, add the uncooked rice and toast it for 1 to 2 minutes while stirring continuously to prevent burning and to bring out a nutty flavor.
  5. Add Broth and Sauce: Pour in the chicken broth and half of the prepared BBQ-honey sauce into the skillet with the toasted rice. Stir to combine everything evenly.
  6. Return the Chicken: Place the seared chicken thighs back into the skillet on top of the rice mixture. Pour the remaining BBQ sauce over the chicken.
  7. Simmer: Cover the skillet with a lid and reduce the heat to low. Let it simmer gently for 15 minutes to allow the rice to absorb the liquid and the chicken to cook through.
  8. Add Vegetables: Stir in the mixed vegetables if using, cover again, and cook for an additional 5 minutes or until the rice is tender and the chicken is fully cooked.
