Instructions
Preheat Oven: Preheat your oven to 425°F (220°C), which will ensure the potatoes roast perfectly with a nice golden crust.
Toss Ingredients: In a large bowl, combine the quartered baby potatoes, finely chopped garlic, extra-virgin olive oil, chopped rosemary, parsley, and thyme. Season generously with kosher salt, freshly ground black pepper, and a pinch of crushed red pepper flakes. Toss everything well so the potatoes are evenly coated with the herbs and oil.
Arrange on Baking Sheet: Spread the potato mixture evenly onto a large metal baking sheet in a single layer. This ensures even roasting and prevents steaming.
