Pie Crust

  • 180 g All-purpose flour (1.25 cups)

  • 2 tbsp Cold water

Filling

  • 500 g Ground beef (1 pound)
  • 2 tbsp Taco seasoning
  • 100 ml Water (½ cup)
  • 150 g Cheese (Gouda or Cheddar), diced (5.3 oz)
  • 4 Eggs
  • 200 ml Milk (0.85 cups)
  • 200 ml Whipping cream (0.85 cups)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare Pie Crust: Cut the cold butter into small pieces. Add flour and a pinch of salt. Pinch together the flour and butter by hand, or mix in a food processor, until the mixture forms a crumbly mass.
  2. Make Dough: Add cold water and mix quickly to form a dough. Press the dough evenly into a 25-28 cm (9.5-11 inch) pie tin. Use a fork to notch the bottom to prevent bubbles.
  3. Protect Crust Edges: Tear a narrow strip of aluminum foil and cover the edge of the pie dough to prevent overbaking at the edges during prebaking.
  4. Prebake Pie Crust: Preheat the oven to 200°C (392°F) and place the pie crust on the middle rack. Bake for 10 minutes to partially cook the crust.
  5. Cook Ground Beef: Brown the ground beef over medium heat in a skillet until no pink remains, breaking it up as it cooks.
  6. Add Seasoning: Stir in taco seasoning evenly into the cooked ground beef.
  7. Simmer Meat Sauce: Pour in 100 ml (½ cup) water and simmer for a few minutes, stirring occasionally, until the sauce thickens slightly.
  8. Prepare Cheese and Egg Mixture: Dice the cheese. In a separate bowl, whisk together eggs, milk, whipping cream, salt, and pepper until well combined.
  9. Assemble Quiche: Remove the prebaked pie crust from the oven. Spread the seasoned ground beef evenly on the crust, then sprinkle diced cheese over the meat.
  10. Pour Custard: Pour the egg, milk, and cream mixture evenly over the beef and cheese layers within the crust.
  11. Bake Quiche: Bake in the preheated oven at 200°C (392°F) for 30 minutes, or until the custard is set and the top is golden.

Notes

  • To prevent the crust edges from burning, make sure to cover them with foil during prebaking and remove foil during the final bake if desired for browning.
