Ingredients

Scale

Roll Ups

  • 1 lb thinly sliced roast beef (deli style or leftover)
  • 1½ cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

Au Jus

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Assemble roll ups: Lay the flour tortillas flat on a clean surface. Place thinly sliced roast beef evenly down the center of each tortilla, followed by a generous layer of shredded mozzarella or provolone cheese.
  3. Roll tortillas: Carefully roll each tortilla tightly around the beef and cheese filling, then place them seam-side down on the prepared baking sheet to hold their shape during baking.
  4. Season and brush: Brush the tops of the roll ups with melted butter, then sprinkle evenly with garlic powder, onion powder, and dried parsley to add flavor and promote browning.
  5. Bake: Place the baking sheet in the preheated oven and bake the roll ups for 12 to 15 minutes, or until the tortillas are golden brown and the cheese has melted beautifully.
  6. Prepare au jus: While the roll ups are baking, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan. Bring to a simmer and cook gently for 5 to 7 minutes to develop a rich dipping sauce.
  7. Serve: Remove the roll ups from the oven and slice them into bite-sized pieces. Serve warm with the hot au jus on the side for dipping to enjoy that classic French dip experience in roll up form.

Notes

  • You can use leftover roast beef or deli-style thinly sliced roast beef for convenience.
  • Substitute mozzarella with provolone cheese for a slightly different flavor.
  • If you prefer a crispier tortilla, bake a few minutes longer but watch carefully to prevent burning.
  • Adjust seasoning in the au jus to taste, adding more Worcestershire sauce or soy sauce for deeper umami if desired.
  • These roll ups work great as a party appetizer or a quick comforting snack.
