  • 1 tablespoon crushed red pepper
  • 1 tablespoon packed brown sugar
  • 6 cloves garlic, crushed
  • 2 teaspoons hickory liquid smoke
  • 1 (12-ounce) bottle or can of beer (optional)

Cooking Liquid

  • 34 quarts water, or enough to cover peanuts

Instructions

  1. Rinse peanuts: Place the raw peanuts into a colander and rinse them thoroughly under cool water at least twice. Remove any debris or damaged peanuts that you may find.
  2. Combine ingredients: Transfer the rinsed peanuts to a large stockpot or Dutch oven (7-8 quarts). Add the Creole Cajun seasoning, kosher salt, Old Bay seasoning, crushed red pepper, brown sugar, crushed garlic, hickory liquid smoke, and the beer if using.
  3. Add water and stir: Pour in enough water to fully cover the peanuts. Gently stir all ingredients together to evenly distribute the seasonings.
  4. Bring to boil: Heat the pot over medium-high heat until the water reaches a rolling boil.
  5. Simmer with lid partly on: Reduce heat to medium-low, cover the pot leaving a small vent for steam to escape, and let the peanuts simmer gently.
  6. Monitor and cook for 7-8 hours: Allow peanuts to cook for 7-8 hours or longer to reach desired texture. Check the liquid level hourly, adding warm water if necessary to keep peanuts submerged. Test peanuts periodically for softness – the shells should be semi-soft and the nuts inside tender but still slightly firm.
  7. Serve or store: Once cooked to your liking, enjoy the peanuts immediately or let them cool to room temperature. Store them along with the cooking liquid in an airtight container in the refrigerator to deepen the flavors.
  8. Reheat before serving: When ready to eat stored peanuts, reheat on the stovetop with some cooking liquid to preserve moisture and flavor.
