Parmesan Cream Sauce

  • 1 tablespoon unsalted butter
  • 2 cloves garlic, finely minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Prep the steak: Pat your steak cubes dry using paper towels to ensure good searing, then season generously with salt and pepper for optimal flavor penetration.
  2. Sear the steak bites: Heat olive oil in a large skillet over medium-high heat. Add the steak cubes in batches to avoid overcrowding which can cause steaming. Sear each batch for 2–3 minutes per side until browned and caramelized. Remove seared steak from the pan and set aside.
  3. Make the garlic butter: Reduce heat to medium in the same skillet and add butter. Once melted, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn the garlic. Return the steak bites to the skillet and toss to coat them thoroughly in the garlic butter. Remove from heat.
  4. Prepare the Parmesan cream sauce: In a separate saucepan, melt butter over medium heat and sauté minced garlic for 30 seconds. Pour in the heavy cream and bring to a gentle simmer. Stir in freshly grated Parmesan cheese and whisk steadily until the sauce is smooth and slightly thickened, about 3–5 minutes. Season with salt, black pepper, and optional red pepper flakes to taste.
  5. Combine and serve: Pour the Parmesan cream sauce over the garlic butter steak bites or serve the sauce on the side. Garnish with freshly chopped parsley if desired. These bites pair wonderfully with pasta, mashed potatoes, or roasted vegetables.
