Broth
- 8 cups water
- 4 tablespoons Better Than Bouillon Chicken
Chicken & Vegetables
- 2 large chicken breasts, cooked and shredded (about 3–4 cups)
- 4 tablespoons salted butter
- 4 carrots, cut in half lengthwise and diced (2 ½ to 3 cups)
- 4 celery stalks, diced (2 ½ to 3 cups)
- 2 small yellow onions, diced finely (1 ½ cups)
- ½ cup flour
- 1 teaspoon Italian seasonings
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Dumplings
- 2 cups Bisquick
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasonings
- ⅔ cup milk
- Make the broth: In a large bowl, combine the water and Better Than Bouillon chicken base. Microwave the mixture for 3 minutes, then remove and stir well. Set aside.
- Sauté vegetables: Heat a large stock pot over medium heat. Add the carrots, celery, onions, and 4 tablespoons of butter. Stir to combine and cook for 10 minutes, stirring often to prevent the onions from burning.
- Add flour and broth: Sprinkle in the ½ cup of flour and stir well to coat the vegetables. Slowly add the prepared chicken broth and bring the mixture to a boil.
- Add chicken and seasonings: Stir in the shredded chicken, 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon salt. Mix well.
- Simmer: Reduce the heat to low and let the soup simmer gently while you prepare the dumplings.
- Prepare dumpling mix: In a bowl, combine the Bisquick with 1 teaspoon salt, 1 teaspoon garlic powder, and 1 teaspoon Italian seasonings. Drizzle in the milk and gently stir to create a thick, paste-like batter. Avoid overmixing.
- Rest dumpling batter: Let the dumpling batter rest for 1-2 minutes before cooking.
- Drop dumplings into soup: Using a 1 ½ tablespoon cookie scoop or spoon, gently drop spoonfuls of the dumpling batter into the simmering pot, leaving space between each to allow expansion. Cover the pot with a lid and cook on low heat for 15 minutes.
