Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Potatoes

  • 2 cups thinly sliced russet or Yukon gold potatoes

Cream Sauce

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup whole milk or heavy cream
  • 1/2 cup sour cream (optional for extra creaminess)

Topping

  • 1 1/2 cups shredded cheddar cheese

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking your casserole.
  2. Cook the Beef and Onion: In a skillet, cook and brown 1 lb ground beef together with the chopped onion. Season with salt, black pepper, and paprika. Once browned, drain the excess fat to keep the dish from being greasy.
  3. Prepare Cream Sauce: In a bowl, combine the cream of mushroom soup, milk (or heavy cream), and optional sour cream. Stir until the mixture is smooth and well blended for a creamy sauce.
  4. Layer Beef in Baking Dish: Grease a 9×13 inch baking dish and spread the cooked beef and onion mixture evenly on the bottom.
  5. Add Potato Layer: Arrange the thinly sliced potatoes evenly over the top of the beef layer, creating a uniform layer.
  6. Pour Cream Sauce Over Potatoes: Evenly pour the creamy mushroom sauce mixture over the sliced potatoes, making sure to cover the entire surface.
  7. Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly on top of the cream sauce layer for a rich, cheesy finish.
  8. Cover and Bake: Cover the casserole dish with foil and bake in the preheated oven for 45 minutes to cook the potatoes thoroughly.
  9. Uncover and Finish Baking: Remove the foil and bake for an additional 15 minutes until the cheese topping is golden brown and bubbly.
  10. Rest and Garnish: Allow the casserole to rest for 5 to 10 minutes before serving. Garnish with fresh parsley for a pop of color and added freshness.

Notes

  • You can substitute cream of mushroom soup with cream of chicken or celery soup for a different flavor.
  • Sour cream is optional but adds extra creaminess and tanginess to the sauce.
  • For a lower fat version, use low-fat milk and reduced-fat cheese.
  • Make sure to slice the potatoes thinly so they cook evenly within the baking time.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
