Mushroom Sauce

  • 12 ounces mushrooms (cremini or white, sliced)
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy/whipping cream

Instructions

  1. Prepare the Chicken: Slice the chicken breasts in half lengthwise to create four thinner cutlets. Season both sides with salt and pepper, then lightly dredge each piece in flour.
  2. Heat the Pan and Cook Chicken: Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken cutlets and cook each side for 4-5 minutes until golden brown. Remove the chicken from the pan and set aside.
  3. Sauté Mushrooms: Add butter to the same skillet and allow it to melt. Then add sliced mushrooms and sprinkle Italian seasoning over them. Cook the mushrooms, stirring occasionally, until they release their water, the moisture evaporates, and they achieve a nice sear. Remove mushrooms and set aside with the chicken.
  4. Create the Sauce Base: To the skillet, add minced garlic, chicken broth, lemon juice, and Dijon mustard. Stir well to incorporate the mustard completely. Allow the mixture to reduce by half, approximately 3-4 minutes.
  5. Finish the Sauce and Cook Chicken Thoroughly: Pour in the heavy cream, then return the chicken and mushrooms to the pan. Let everything simmer together for about 5 minutes until the chicken is fully cooked and the sauce has thickened.
