Perfect for a quick breakfast snack, afternoon tea, or dessert.

Ingredients

Scale

Dough

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract

Cinnamon Sugar Swirl

  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Prepare the dough: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. Beat in the egg and vanilla extract until well combined. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  2. Form the cinnamon swirl: On a lightly floured surface, roll the dough into a rectangle approximately 12 by 8 inches. Mix the sugar and cinnamon in a small bowl and evenly sprinkle it over the dough’s surface.
  3. Roll and slice: Starting from one long edge, carefully roll the dough up tightly like a jelly roll. Using a sharp knife, slice the log into 1/2-inch thick rounds.
  4. Bake the cookies: Preheat the oven to 350°F (175°C). Place the cookie rounds on a parchment-lined baking sheet, spaced about 2 inches apart. Bake for 12 to 15 minutes or until the edges are golden brown and the centers are set.
  5. Cool and serve: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

  • You can add a simple glaze of powdered sugar mixed with milk to drizzle on top for extra sweetness.
  • Make sure the butter is softened to room temperature to blend smoothly with the sugar.
  • For a richer flavor, you can replace half the butter with cream cheese.
  • The cookies keep well in an airtight container at room temperature for up to 3 days.
  • To store longer, freeze the baked cookies in an airtight container for up to 2 months.
