Ingredients

Scale

Cinnamon Crumble

  • ¾ cup melted butter ( sticks)
  • 1½ cups all-purpose flour
  • ¾ cup brown sugar
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg

Coffee Cake Batter

  • ½ cup butter (softened)
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅔ cup sour cream
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350˚F to ensure it’s at the right temperature when the cake is ready to bake.
  2. Prepare Cinnamon Crumble: In a medium bowl, mix together the melted butter, flour, brown sugar, cinnamon, and nutmeg. Use a fork to combine these ingredients until the mixture becomes crumbly and evenly textured.
  3. Make Coffee Cake Batter: In a large bowl, beat the softened butter and white sugar together using a hand mixer or wooden spoon until the mixture is light and fluffy. Add the eggs and vanilla extract, stirring until fully incorporated, then fold in the sour cream gently.
  4. Combine Dry Ingredients: In a separate bowl, mix the flour, cinnamon, baking powder, and salt. Add this dry mix to the wet butter mixture and stir just until moistened, avoiding overmixing to maintain cake tenderness.
  5. Assemble Cake Layers: Grease an 8-inch square baking dish. Spread half of the coffee cake batter evenly on the bottom of the dish. Sprinkle half of the prepared cinnamon crumble over the batter. Then spread the remaining coffee cake batter over the crumble layer, and finish by topping with the remaining cinnamon crumble.
  6. Bake: Place the baking dish in the preheated oven and bake for 42-50 minutes. Check doneness by inserting a toothpick into the center of the cake—if it comes out clean, the cake is ready.
  7. Cool and Serve: Allow the cake to cool for 5 minutes after baking. Cut into 16 squares and serve warm with coffee or your preferred beverage.

Notes

  • For a nuttier crumble, consider adding ½ cup chopped walnuts or pecans to the crumble mixture.
  • Make sure not to overmix the batter once the flour is added to keep the cake tender and soft.
  • Use room temperature eggs and butter to ensure smooth batter mixing.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • The cake can be gently reheated in the microwave or oven before serving.
