Instructions

  1. Caramelize the Sugar: In a medium Dutch oven or heavy-bottomed pot over medium-high heat, evenly sprinkle 1/4 cup granulated sugar. Cook, stirring occasionally, until the sugar melts, about 1 minute. Continue adding the remaining sugar in 1/4 cup increments, allowing each to melt completely before adding the next. The sugar should turn a deep amber brown, and a candy thermometer should register between 275° to 280°F, indicating the hard crack stage.
  2. Add the Butter: Remove the pot from heat. Whisk constantly and add 2 cubes of cold unsalted butter at a time, allowing each addition to melt completely before adding the next. This creates a smooth, rich toffee base.
  3. Pour Toffee into Molds: Carefully divide the hot toffee among the 30 compartments of the silicone ice cube molds, approximately 1 tablespoon per compartment.
  4. Add Chocolate and Spread: Sprinkle 2 teaspoons of mini semisweet chocolate chips over each toffee portion. Let them sit for about 2 minutes until the chocolate melts. Using the back of a 1/2-teaspoon measuring spoon, gently spread the melted chocolate into an even layer.
  5. Top and Set: Sprinkle coarsely chopped toasted pecans and a pinch of flaky sea salt over the melted chocolate layer on each bite. Refrigerate the molds until the toffee sets firmly, at least 30 minutes and up to 1 hour.
