  • 1/2 cup Banana (about 1 large banana)
  • 3/4 cup Self-Rising Flour
  • 1/2 teaspoon Cinnamon
  • 1/4 cup Unrefined Sugar
  • 2 tablespoons Coconut Oil (melted, or melted vegan butter)
  • 23 teaspoons Melted Coconut Oil (for adjusting dough and brushing)
  • Avocado Oil Spray (for air fryer basket and donut holes)

Instructions

  1. Mash the banana: Mash the banana into a smooth puree until you have 1/2 cup. This is essential to ensure the batter comes together properly with the flour ratio.
  2. Form the dough: Add the self-rising flour and cinnamon into the mashed banana. Stir initially with a rubber spatula until lumps form. Then oil your hands with melted coconut oil and knead the dough. The dough will be sticky and moist; keep kneading while adding up to 2-3 teaspoons of melted coconut oil if needed to prevent it from becoming too dry. Do not add extra flour. Your goal is a moist and elastic dough ball.
  3. Shape the donut holes: Grease your hands with melted coconut oil, scoop about a tablespoon of dough, and roll it into a ball. Place the balls on a parchment-lined plate. Repeat until all dough is used. Spray avocado oil over the donut balls to prevent sticking and help browning.
  4. Prepare air fryer: Spray the air fryer basket lightly with avocado oil spray. Arrange the donut holes inside, leaving about 1 inch (3 cm) space between each to allow for expansion.
  5. Air fry: Cook at 350°F (180°C) for 6-7 minutes until the donut holes are puffy and golden brown. They may have an irregular, rocky shape and some won’t be perfectly round; this is normal.
  6. Coat with cinnamon sugar: While the donut holes are still warm, brush each one generously with melted coconut oil using a pastry brush. Immediately roll them in a cinnamon sugar mixture (combine cinnamon and sugar to taste) until evenly coated.
